I wanted to do a little twist on the classic leek and potato soup. The only way to get Ethan to eat sweet ("orange") potato is in soup and he gobbled it down. It can't have just been for the reason that I said as soon as they'd finished they could go back to watching their superhero programme on TV!
This soup will store in an airtight container for a couple of days in the fridge or in the freezer for a few months. The recipe below serves two adults and two children with one portion left over for a lunch or dinner another day.
This is a really summery salad. I love to make it for a summer's evening barbecue or have it for a work lunch. I eat it with a big spoon of houmous and beetroot salad. It would also go great with some warm green veg such as green beans, spinach or tender stem broccoli.
This soup is brilliant for using up veg that you have in the cupboard or fridge that may be starting to go past its best. It's also great because it means that the kids will have quite a lot of their 'five a day' in one meal and because it's smooth they don't act suspicious about what's in it. In fact whenever I make it they ever moan and quite often ask for seconds.
